This is a light summer pasta, which is always popular on The Gate’s menu. It is a useful way to utilize cooked pasta that may have been sitting in the fridge: simply heat it up by popping it in boiling water for 30 seconds.

Ingredients

  • penne 500 g (1 lb 2 oz)
  • salt

Method

  1. Put the pasta in a large saucepan of boiling salted water, and cook for the specified time, usually about 10 minutes. Drain well.
  2. Marinate the sliced onion, sugar, and vinegar together for 10 minutes.
  3. To make the basil oil, blend together the basil, lemon juice, and olive oil.
  4. Put the hot, drained penne in a large bowl and dress with the basil
