There is something in our cultural make-up that compels us to put stuffings in our food, and this technique occurs throughout our cooking. There is no exception in our approach to Italian food. These delicious, stuffed rice fritters make a lovely starter or canapé served with pesto or aïoli.

Method

  1. In a large, shallow pan, heat the olive oil, add the shallot, garlic, and thyme, and cook for 2 minutes.
  2. Add the rice to the pan with a large ladleful of stock and stir in well. Continue stirring, and, as the stock is absorbed by the rice, add another ladleful of stock. Continue this process for about 15 minutes or until the rice is just cooked. Remove from the he
