Khichri is a simple and nutritious rice and lentil pilaff, and it is typically eaten with a salad or a good chilli sauce. Khichri is best eaten when freshly cooked.

basmati rice350g (12oz), soaked in water for 1 hour
In a medium-sized pan, heat the oil, add the turmeric, and almost immediately add the rice and lentils. Cook in the pan for 2–3 minutes, stirring well.
