In Indian cuisine ha ka ka is a term for the caramelized food at the bottom of the pan, which is much sought after but is usually the domain of the cook. This recipe was introduced to us by a good friend who grew up in Afghanistan. It is a traditional festive rice dish, usually served on special occasions. We particularly love the scent of the rose petals and the flavour of the potato and rice ha ka ka at the bottom of the pan.
