The combination of caramelized onion and goat’s cheese is a real favourite at The Gate, and we have used it in many different ways. This recipe can make an elegant starter served on a bed of rocket leaves, or can be miniaturized for canapés.


  • puff pastry 250 g (9 oz)
  • egg 1 medium, beaten


  1. Preheat the oven to 190°C/375°F/gas mark 5.
  2. To start the filling, melt the butter in a pan. Add the onion and sauté until beginning to soften; about 5 minutes. Add the sugar and balsamic vinegar, and continue to cook until all the liquid has evaporated. L
