Potato cakes are one of the ultimate comfort foods. They are versatile and can be enjoyed by themselves or as part of a larger dish. This recipe was inspired by an aunt who used to make potato cakes very similar to these when we were young.


  • floury potatoes 1 kg ( lb)
  • spring onions 1 bunch


  1. Boil, peel, and mash the potatoes and leave to cool.
  2. When the mash is cold, mix it with the spring onion, fresh and ground coriander, lime juice, and lemon grass.
  3. Mould into cakes by hand or use a pastry cutter to make rounds of about 7.5cm (3in).
  4. Roll the potato cakes in flour and shallow-fry for 3–4 minutes on each side. Drain on kitchen pape
