This recipe is really a stroganoff on heat. The smoky flavour of the chipotle chillies enlivens the sour cream sauce. Our favourite way to eat this dish is with a simple mash or roasted potatoes.


  • butter 55 g (2 oz)
  • red onion 1 large, thinly sliced<


  1. In a pan, melt the butter and sweat the onion with the chipotle purée and paprika for 3–4 minutes.
  2. Add the wild mushrooms and white wine, and continue to cook until the excess water and wine have almost completely reduced: about 6–7 minutes.
  3. Stir in the sour cream and simmer for 4–5 minutes. Add the chives and serve hot.
