Although it is not a dish that we traditionally cook at home, korma – with its sweet spices and yogurt has more of a delicate flavour than most Indian curries, and has proved a popular dish at The Gate. We serve it with complementary sweet vegetables such as pumpkin and Jerusalem artichokes.

  1. For the sauce, blend together the garlic, ginger, chillies, and onion in a food processor.
