Although it is not a dish that we traditionally cook at home, korma – with its sweet spices and yogurt has more of a delicate flavour than most Indian curries, and has proved a popular dish at The Gate. We serve it with complementary sweet vegetables such as pumpkin and Jerusalem artichokes.

Ingredients

  • Jerusalem artichokes 100 g ( oz), blanched

  1. For the sauce, blend together the garlic, ginger, chillies, and onion in a food processor.
  2. Heat the oil in a pan then add the turmeric, garam masala, ground coriander, mustard seeds, and cardamom pods. Fry the spices in the hot oil for a minute or so, then add the blended onion mix and cook on a medium heat for 6–7 minutes, turning constantly.
