The fermented soya beans in this recipe give the dish a really distinctive flavour that combines beautifully with the sweetness of the pumpkin. The beans come dried in small packets, available at Asian grocers.


  • sesame oil 1 tbsp
  • garlic clove 1, crushed
  • fresh root ginger


  1. In a large pan or wok, heat the sesame oil. Add the garlic, ginger, onion, and drained soya beans, and sauté together for 2–3 minutes.
  2. Put the soya beans and water in a blender and blend. Add to the pan along with the pumpkin and green beans, cover, and simmer for 10–12 minutes.
  3. Remove the lid, add the soya sauce and mirin, and continue cooking fo
