When Adrian invites our chefs over for dinner, there is a tradition that he cooks Indian food. As an alternative to the usual curries he prepares for them, this dish was created with a summer evening in mind, when a heavy curry does not appeal. Paneer is a mild, firm-textured Indian cheese that absorbs the flavour of spices. This mushroom and paneer dish with its spicy dauphinoise is both comforting and elegant.
