Growing up as a fussy eater was not easy for Adrian – or for our mother. When we started to cook, we made it our goal to discover vegetables and the best way of cooking them. Fennel is one of those vegetables that people love or hate. This is probably our favourite way of eating it because the caramelization with the butter and white wine brings out fennel’s delicate sweetness, and it is a perfect accompaniment to a plate of wild mushrooms with a few sautéed potatoes.
