Kale is a member of the cabbage family, and is available throughout the winter. We were introduced to this vegetable by our good friend Ahmed, chef and owner of what was Granita. This quick and simple method of cooking kale brings out the best of its flavour and texture.


  • olive oil 1 tbsp
  • kale 100 g ( oz),


  1. In a wok or large pan, heat the olive oil. Add the kale and pan-fry for 3–4 minutes, turning regularly.
  2. As the kale is beginning to wilt, add the lemon juice and cook for a further minute. Season to taste, and serve immediately.
