This is a variation on a popular theme. The slow roasting brings out the natural sweetness of these vegetables and, layered together, they make a colourful and tasty dish.

Method

  1. Preheat the oven to 180°C/350°F/gas mark 4. Grease a 15 x 20 cm (6 x 8 in
