Parsnip is one of our favourite root vegetables, and this lovely technique for caramelizing works particularly well. It is a favourite on our Christmas menu.

Ingredients

  • parsnips 400 g (14 oz), peeled and cut into sticks
  • olive oil 1

Method

  1. Preheat the oven to 200°C/400°F/gas mark 6.
  2. Toss the cut parsnips with the olive oil and thyme in a baking tray. Sprinkle with a little salt.
  3. Bake for
