We should probably start this introduction by admitting that, until recently, no fresh tomato had passed our lips since we were boys; like most people in this country, the thought of tomato soup was for us synonymous with the name “Heinz”. It was only when we first tasted a roasted tomato that we realized what a wonderful flavour it possessed with all the moisture drawn from the fruit.
