For all the fancy work that we have done with artichokes in The Gate’s kitchen, there is still something very satisfying about the simplicity of eating a whole globe artichoke leaf by leaf.

  • lemon juice or white wine vinegar 1 tbsp


  1. Boil the artichokes in acidulated water (with the lemon juice or vinegar added) for 15 minutes, or until the hearts are cooked. Drain well.
  2. While the artichokes are boiling, make the dressing. Mix all the ingredients together in a bowl until the dressing emulsifies.
  3. Serve the artichokes whole on individual plates, and put the dressing in four small dippi
