This is an ideal summer dish which reminds us of warm evenings on the kibbutz, where a large bowl of this salad would be enjoyed in between drinks and food. It can be served as a starter or as a dessert.


  • feta cheese 500 g (1 lb 2 oz), cut into 1cm (½in) cubes


  1. Put the feta cubes in a bowl and lightly mix with the olive oil and mint. Leave for 20 minutes or so.
  2. To serve, place the chopped watermelon in a large serving platter. Sprinkle with the feta cheese, mint, and olive oil.
