Searing is a lovely technique for removing the bitterness from vegetables such as endive and radicchio. It works as well on the barbecue as it does in the frying pan. The combination of the figs and pecorino (which can be substituted by Parmesan) makes a delightful summer salad.

Ingredients

  • green chicory 4 bulbs
  • balsamic vinegar 1 tbsp
  • hazelnut oil

Method

  1. Cut the chicory bulbs in half lengthwise. Mix together half the vinegar and half the oil in a dish and allow the chicory to marinate in this for 15 minutes.
  2. Heat a non-stick frying pan. Sear the chicory, cut-side down, for 2–3 minutes, cooking on one side only.
  3. Divide the seared chicory and figs among four plates. Sprinkle with the walnuts and pecorino s
