This is a lovely, simple, and quick-to-prepare pâté. It is surprisingly rich and satisfying, and makes a delicious hors d’oeuvre eaten with a loaf of crusty bread or crudités and a glass of red wine.

Ingredients

  • butter 55 g (2 oz)
  • garlic clove 1, crushed

Method

  1. In a pan, melt the butter, then add the garlic and rosemary, quickly followed by the onion. Sauté for 3–4 minutes until the onion is translucent.
  2. Add the mushrooms, and once they have begun to emit their liquid, add the white wine and continue to cook until all the liquid has reduced and the mushrooms are nicely glazed.
