This simple, quick-to-prepare dipping sauce, traditionally served with Thai spring rolls, makes a good accompaniment to many kinds of fritters. It keeps in the fridge for months and can also be used as a dressing for salads or added to stir-fries with a few drops of soya sauce.
Ingredients
- clear honey
2 tbsp - rice vinegar
2 tbsp - red chilli
Method
- Put all the ingredients in a small pan with 150ml (5fl oz) water, and bring to the boil.
- Simmer for 6β7 minutes until the sauce reduces and thickens slightly.
