This simple, quick-to-prepare dipping sauce, traditionally served with Thai spring rolls, makes a good accompaniment to many kinds of fritters. It keeps in the fridge for months and can also be used as a dressing for salads or added to stir-fries with a few drops of soya sauce.

Ingredients

  • clear honey 2 tbsp
  • rice vinegar 2 tbsp
  • red chilli

Method

  1. Put all the ingredients in a small pan with 150ml (5fl oz) water, and bring to the boil.
  2. Simmer for 6–7 minutes until the sauce reduces and thickens slightly.
