When we were growing up, baked cheesecake was a speciality of the local kosher bakers, most of whom came from Eastern Europe. One could always tell a good cheesecake if it stuck to the roof of the mouth. This cheesecake is much lighter, however – and, being non-baked, it takes almost no time to prepare.

Ingredients

  • white chocolate 500 g (1 lb 2 oz), broken into pieces

Method

  1. To make the base, mix together the biscuits, melted butter, and cinnamon. Place in a 25 cm (10 in) cake tin and press down firmly and evenly across the base of the tin. Chill for 15 mi
