This is a quick recipe and a very enjoyable one to make. Once you have caramelized the fruit and assembled the tart it can be kept in the fridge ready to be baked at the time of your choice. You can substitute the quinces with apples or pears.

Ingredients

  • quinces 3, peeled, halved, and cored
  • caster sugar 55 g (2

Method

  1. Put the quince halves, caster sugar, and water in a pan and poach for 15–20 minutes or until the quince is soft.
  2. Preheat the oven to 180°C/350°F/gas mark 4.
  3. Spread the butter over the base of a medium tarte tatin tin (flameproof and ovenproof).
