This filling also works well for ravioli. Potato, for such a humble foodstuff, makes a tasty, subtle filling. It is delicious either with rich, flavoursome sauces (as a starchy foil to the real business of the sauce), or delicate, similarly plain ones in harmony, such as the simplest of butter sauces.
