These misshapen green dumplings are another favourite of mine and my father’s. There is some confusion as to the correct name — some insist they should in fact be called gnudi, and that malfatti are instead stuffed parcels, akin to tortelloni or flat misshapen pasta (aka maltagliati). It is our considered opinion that malfatti are distinct, and here is how to make them.
