The cooked langoustines tails bear a vague similarity in shape to the gomiti, which is pleasing. Tubular festoni, ruched tubes looking somewhat segmented, are a better visual homonym of the langoustines tails but have been omitted from this book as they no longer seem as available as they once were. Alternative pairings might involve richer egg pastas.
