Maccheroni alla Chitarra: Poor Man’s Truffle

Despite its name, this sauce does not exactly taste of truffles, although it does share their earthy complexity. In this day and age, truffles being the price they are, ‘middle-class truffle’ would be just as apt — none but the über-rich can afford the real deal.

This sort of dryish sauce goes so well with the chewy texture of fresh pasta that it is one of the few recipes for which I would recommend fresh spaghetti (available at many supermarkets) as a suitable alternative pasta.
