Chakapuli is another popular slow-cooked dish. It can be made with almost any meat, although lamb or kid is preferred. This sort of liquidy stew is popular in Georgia. The meat is eaten separately, then the broth drunk like soup. Redolent with herbs and pungent with the fruity flavors of wine and tkemali sauce, chakapuli for me captures the essential taste of Georgia. Serve this stew with bread and mild cheese.
