Although red meat is considered the fare of choice for open-flame cooking, other foods are grilled as well. A whole chicken is sometimes stuffed with a mixture of suluguni cheese and pomegranate seeds and roasted on a spit over a slow fire, the pomegranate seeds cutting the richness of the dish. The same principle holds for chicken stuffed with rice and cherries, in which the dried fruit imparts an agreeable tang to the filling. The Georgians use dried cornelian cherries for this dis
