A zestful companion to chicken tabaka.


  • ½ cup chicken broth
  • 3 or 4 garlic cloves, peeled and roughly chopped
  • ¼


In a small saucepan heat the chicken broth. With a mortar and pestle, mash the garlic with the salt until a creamy paste is formed. Whisk the garlic into the chicken broth along with the paprika and cayenne. Just before serving, stir in the cilantro.
