  • 1 litre goats milk
  • 2 tablespoons natural yoghurt


  • boil the milk in a saucepan until it begins to froth
  • remove the froth from the surface of the milk, then take the pan off the heat & cool until lukewarm
  • add yoghurt to the milk & mix well
  • pour into a clean jar & close with a tightly fitting lid
  • cover with a towel to insulate the jar for 12 hours, before placing the leben in
