  • 1 litre leben
  • 1 teaspoon salt

Method

  • add the salt to the leben, & pour into a sieve lined with muslin, placed over a saucepan, & cover with a cloth
  • drain for 7-10 hours, so that all the liquid seeps out & only the thick curds remain
