  • 1 kg fresh olives, washed
  • 1 litre cold water
  • 4 hot


  • wash the olives well & make a slit in each, leaving the stone intact
  • rinse the olives again & drain well
  • fill a large, clean plastic bottle with olives & add the halved chillies & lemon slices
  • fill a jug with 1litre of cold fresh water & pour it into the bottle of olives to cover
  • add salt & close the bottle tight
