  • 200 g freekeh
  • 1 medium onion, finely chopped
  • 3 tablespoons olive oil


  • place the onions in a saucepan with the olive oil & cook on a medium heat for 10-15 minutes, stirring occasionally until the onions are soft & brown
  • while the onions are cooking, soak the freekeh in cold water for 5 minutes, drain & then rinse well under cold running water for 1-2 minutes to remove any grit, then drain well
  • add the freekeh &
