For the patties

  • 1 onion, peeled
  • 1 potato, peeled
  • large handful of flat leaf parsley</


  • place the onion, potato & flat leaf parsley into a food processor & pulse until it becomes a paste
  • place the minced meat & spices in a large bowl & add the herbed onion & potato paste, mix well
  • pour the olive oil into a large ovenproof dish
  • take balls of minced meat, flatten with the palm of your hands to form
