Shishbarak is also known as Old Man’s Ears. This dish originated from Armenia, but has been served as part of the traditional Arabic cuisine for centuries. It is a local, rustic dish of meat dumplings cooked in a sour yoghurt sauce, which has over the years been promoted to become part of the traditional Druze wedding meal, served in huge quantities.
