  • 1 kg fresh green olives, washed
  • 1 litre cold water

  • wash the olives well & make a slit in each olive, leaving the stone intact, then wash again & drain
  • fill a large, clean plastic bottle with olives & add the chillies, lemon pieces & cinnamon stick
  • fill a jug with 1 litre of cold fresh water & pour it into the bottle to cover the olives
