  • 500 g black olives
  • 60 mls extra virgin olive oil
  • extra-large


  • wash the olives in cold water, drain & pat dry with kitchen paper
  • place the olives in a large bowl & add the finely chopped ferjan, lemon slices & chilli flakes, if using
  • pour over the olive oil & mix well
  • leave in bowl, covered with cling film for 24 hours before serving
  • store the marinated olives in an airtight contain
