Ingredients

  • 1 large aubergine, chopped into cubes
  • 1 teaspoon salt
  • 350 mls

Method

  • place the aubergine cubes in a bowl & sprinkle with salt
  • heat the corn oil in a large frying pan and fry the cubes for 5-8 minutes until brown and cooked, then place on kitchen paper to drain
