  • 500 g okra
  • 120 mls olive oil & 120 mls


  • slice off the tops of each okra & rinse
  • heat the olive oil & vegetable oil in a large pan over a medium to high heat, & once hot fry the okra in batches for 5-6 minutes until slightly crisp, remove & drain
  • once all the okra has been fried & set aside, add the slices of onion to the oil & cook for 10 minutes on a medium heat until so
