  • 4 large carrots, peeled & sliced
  • 1 green & red chilli, deseeded & sliced
  • 1 large c


  • bring a saucepan of water to the boil & place the carrot slices in the boiling water for 1-2 minutes until a knife is just able to prick through the slices
  • drain & run under cold water to stop the cooking process, then place in a salad bowl to cool
