Ingredients

  • 8-10 kg soft, overripe tomatoes, very roughly chopped
  • 300 g salt

Method

  • place all the tomatoes into a large pan & cook on the hob on a low heat for 12 hours until all the tomatoes have reduced down to a thick, juicy pulp
  • remove from the heat & sieve the sauce to remove the skin & seeds, then place back into the pan
  • add the salt, mix well & return to a low heat for 5 minutes so that the tomatoes absorb the flavo
