Ingredients
- 8-10 kg soft, overripe tomatoes, very roughly chopped
- 300 g salt
Method
- place all the tomatoes into a large pan & cook on the hob on a low heat for 12 hours until all the tomatoes have reduced down to a thick, juicy pulp
- remove from the heat & sieve the sauce to remove the skin & seeds, then place back into the pan
- add the salt, mix well & return to a low heat for 5 minutes so that the tomatoes absorb the flavo
