  • 1 bunch jarjir or wild rocket leaves, washed
  • 1 small onion, very thinly sliced
  • 1


  • soak the leaves in plenty of cold water to remove any dirt or grit
  • chop or tear the jarjir & place in a bowl, add the onion slices & mix well
  • add the salt & sumac & gently mix
  • mix the olive oil & lemon juice together in a small bowl & pour it over the jarjir, onion & spices, & mix together with your hands
