- 225 g brown lentils
- 300 mls cold water

Method
- place the lentils in a pan & cover with cold water, add salt & place on a medium heat on the hob
- bring the lentils to the boil, cover & reduce the heat & leave to simmer for 30 minutes until the lentils are cooked, with a slight ‘bite’
- drain the lentils & place in a serving bowl, add the olive oil & season with salt & black pepp
