  • 500 g akub, thorns removed
  • 1 onion, finely chopped
  • 60 mls


  • chop the akub, using all the thistle (stems & heads) & place in a large bowl full of cold water, to keep fresh
  • place the chopped onion into a saucepan with the olive oil & cook gently until soft & golden, but not brown
  • drain the akub from the water & add to the pan with the onion, mix well & fry on a high heat for 1-2 minutes, then
