  • 40 red chillies

Method

  • place the chillies on a large tray & leave to dry in the sun for 1 month, until the skin is dark red & shrivelled
  • wash all the chillies & with a sharp knife slit open one side of the skin & wash the inside of the chilli too
  • grind all the chillies together, until a smooth, thick paste is formed
