- 500 g mini cucumbers, whole
- 2 teaspoons salt

Method
- wash the whole cucumbers thoroughly & remove any remaining stalks, place in a large, clean jar
- add salt, sugar & chilli flakes
- fill the jar with cold water to cover the cucumbers & place the lid on the jar & close tightly
- leave in a cool dark place for 1-2 weeks before eating
