    This Sweet and Sour Pineapple Pork is a good example of glazing deep-fried food with a thickened sauce by a brief stir-frying tumble. The pork -Fttg and sauce are cooked separately, then tossed together just before serving. The egg yolk in the marinade gives the crust a marvelous fluffy crispness. The meat may be cooked in several different ways, which you will find under Variations.
