Velveted and slippery-coated ingredients are ideal for steaming with rich seasonings for a very tasty, creamy result. This recipe gives you a lovely lemon-flavored sauce over a smooth succulent, chicken.
Follow the preliminary steps for velveting the chicken according to the master recipe, but do not put it through the warm oil. Place it on a heatproof platter, spreading out the meat evenly, without too much overlapping, so that the sauce can melt and flavor all the pieces.
