    While Westerners bake a meat loaf, the Chinese steam one, in the shape of a shallow pie. March-chopped until smooth and mixed with moisture-giving ribs of lettuce, the meat is light and succulent. This makes a delicious simple meal when served with a stir-fried vegetable and some fluffy rice with which to soak up the marvelous juices.
