Velveted as a complete cooking process, these fluffy shrimp are then tossed with a spirited sauce and served lukewarm. If you wish to present a more substantial-looking platter, pile the shrimp in the center and surround with vegetables, such as Sweet and Sour Cucumber Skins, Spicy Minced Watercress, or Chilled Lima Beans.


  • 1 pound velveted small shrimp


Marinate and set the shrimp as in the master recipe. Velvet them either in oil or water, but increase the cooking time by about 45 seconds until they are completely cooked. Drain and place them in a bowl. This may be done an hour or so in advance; cover but don’t refrigerate, lest they harden.
